this week's meal plan!
chicken parm gnocchi is one of our favorite meals! here is the og recipe- a must do tip: toss the gnocchi in a little olive oil in a medium hot skillet until they are browned- then put them in the dish! i make it a little different every time :D for the tomato sauce, i added fresh chopped thyme, rosemary, and basil, plus sauvignon blanc and red pepper flakes. i also make it gluten free by using gf flour and gf gnocchi
we are trying the crockpot chicken enchiladas- since i am low fodmap, i swapped out the garlic and onion in the sauce with garlic olive oil, and i roasted some poblano peppers to add to the enchiladas.
