NEED:
- tomatoes (i used roma)- (small battch: 2-3 romas, large batch.... as many as you want)
- jalapenos- to taste!
- yellow onion cut into quarters- to taste- *i am low fodmap so i omit
- garlic- to taste- *i am low fodmap so i swap this with a little garlic oil at the end
- lime juic
- fresh chopped cilantro
- salt, pepper
DO:
- preheat oven to 400 degrees
- roast the whole tomatoes, jalapenos, onion and garlic (if using) for about 30 minutes
- take them out of the oven to cool when the tomatoes look slightly charred, and squishy
- let cool on the sheet pan
- using an immersion blender (or regular), pulse the roasted veggies until you have the consistency you like. if you want it more chunky, leave some of the veg out for the first blend and then only quickly pulse the 2nd time when you add in the rest of the veg
- stir in cilantro, lime juice, salt and pepper
- taste
- add more of the cilantro, lime, salt and/or pepper if needed
