i am going to try this soon-
slow cooker enchiladas- however, i am garlic and onion free (low fodmap) so here are my variations-
- replace the onion and garlic with a drizzle of garlic olive oil (garlic is not oil soluble- all the taste, none of the issues) and no fodmap onion powder
- add chopped poblano peppers in the skillet when the garlic/onion would be added. this will increase the veggie factor and help the spices still get toasted
- for sure i will make a homemade enchilada sauce (again... i can control the onion/garlic)
