breakfast for one- leftover baked potato variation

 breakfast for one- today's variation! 

look back at breakfast for one or many for the original post and directions. 


today i used leftover baked potatoes, diced jalapenos, ham and avocado! 

NEED: 

  • egg 
  • leftover baked potato- diced
  • ham- diced
  • jalapeno-diced
  • avocado- sliced 
  • tajin 
  • salt
  • cooking spray
DO: 
  • preheat a skillet over medium heat 
  • spray pan carefully with cooking spray (it can flame up a tiny bit) 
  • add diced potatoes, ham and jalapenos
  • sauté for a few minutes until you have received your desired browning 
  • move the potato/ham mix to the side of the pan. remove pan from heat and add a little bit of cooking spray on the open part of the pan 
  • crack one egg into pan, let cook a minute or two, then flip over to cook the whites. if you do not want an over easy egg, break the yolk and let cook a bit longer or scramble it with the veggie/meat mixture
  • plate your cooked food, add your avocado, sprinkle with salt and tajin
  • enjoy
