breakfast for one- today's variation!
look back at breakfast for one or many for the original post and directions.
today i used leftover baked potatoes, diced jalapenos, ham and avocado!
NEED:
- egg
- leftover baked potato- diced
- ham- diced
- jalapeno-diced
- avocado- sliced
- tajin
- salt
- cooking spray
DO:
- preheat a skillet over medium heat
- spray pan carefully with cooking spray (it can flame up a tiny bit)
- add diced potatoes, ham and jalapenos
- sauté for a few minutes until you have received your desired browning
- move the potato/ham mix to the side of the pan. remove pan from heat and add a little bit of cooking spray on the open part of the pan
- crack one egg into pan, let cook a minute or two, then flip over to cook the whites. if you do not want an over easy egg, break the yolk and let cook a bit longer or scramble it with the veggie/meat mixture
- plate your cooked food, add your avocado, sprinkle with salt and tajin
- enjoy
