spanish rice

 easiest recipe ever!

NEED: 

  • 2 cups rice (i prefer jasmine. regular white is okay too)
  • 1 1/2 cup water or chicken broth 
  • 1 cup salsa 
  • salt

DO:

  • rinse rice until runs clear 
  • add rice, water/broth to instapot, and stir gently 
  • put salsa on top (do not stir) 
  • cook on high 10 minutes, natural release 10 minutes 
  • season with salt to taste 
if you are low fodmap, try this salsa in your recipe!


no instapot? use the stove top! 
  • rinse rice until runs clear 
  • add rice, water/broth to instapot, and stir gently 
  • put salsa on top (do not stir) 
  • bring to a boil over medium-high, then reduce heat to low 
  • cover tightly with a lid, simmer 18-20 minutes (rice will be tender, liquid absorbed)
  • fluff with a fork, salt to taste
