eggs are a quick, tasty high protein dinner!
basic scrambled eggs:
NEED:
- 1-2 eggs per person
- drizzle of water
- salt, pepper
- cooking spray
DO:
- break eggs into a large bowl (give yourself lots of extra space)
- drizzle in a bit of water
- whip vigorously with a fork or whisk until eggs are slightly frothy and well blended
- add salt, pepper
- preheat a skillet to medium, spray with cooking spray (carefully- it can flare up)
- add eggs, let sit for at least 30 seconds
- stir frequently until eggs are opaque and not runny (curds will have formed, and will be kind of shiny and wet but not liquid- eggs will continue to cook as you take them off the heat)
