scrambling eggs

 eggs are a quick, tasty high protein dinner!

basic scrambled eggs: 

NEED: 

  • 1-2 eggs per person 
  • drizzle of water 
  • salt, pepper 
  • cooking spray

DO: 

  • break eggs into a large bowl (give yourself lots of extra space) 
  • drizzle in a bit of water 
  • whip vigorously with a fork or whisk until eggs are slightly frothy and well blended 
  • add salt, pepper 
  • preheat a skillet to medium, spray with cooking spray (carefully- it can flare up) 
  • add eggs, let sit for at least 30 seconds 
  • stir frequently until eggs are opaque and not runny (curds will have formed, and will be kind of shiny and wet but not liquid- eggs will continue to cook as you take them off the heat)
