cilantro lime rice

 fresh, bright, herby! 



NEED: 

  • 1 cup white rice (we use jasmine)  RINSED
  • 1 cup water or broth 
  • salt 
  • 1/2-1 cup chopped cilantro (to taste) 
  • 1 clove garlic *if using 
  • 1 lime juiced (can substitute with lime juice)


DO: 

  • mix rice and water/broth in the instapot 
  • cook on high pressure, 10 minutes. let natural release 10 minutes 
  • mix together cilantro, garlic (*) and lime juice (i prefer to blend this) 
  • stir into cooked rice 
NO INSTAPOT? 
  • use the stove- mix rice and water,/broth (increase water/broth to 1.5 cups) bring to a boil, reduce to simmer, cook covered 20 minutes
