baked potatoes

 i love baked potatoes- 

my favorite way to eat them is when they get a long cook in the oven (long version) but in a pinch, when time is short, i will make them in the microwave (short version) and finish them in the oven :) (or not if time is super tight) 

NEED: 

  • russet potatoes, washed and "stabbed" with a fork deeply or a sharp knife (prevents them from exploding) 

long version: 

  • heat oven to 400-450 
  • place potatoes inside 
  • let cook at least 60 minutes (if the potatoes are small, this is probably enough... if they are bigger, may need a bit more time) 
      **IF the potatoes are not cooking as fast as you need.... take them out of the oven, put them in the microwave for a while, and then back into the oven :D 

short version:

  • heat oven to 400-450 
  • microwave the potatoes 8-10 minutes (check them, they need to be squishy- if not, add more time)
  • put in the hot oven, let cook 10 minutes or so minutes to help the skin get a little crisped up
