roasted red skin potatoes

 roasted red skin potatoes are the easiest side dish! 


NEED: 

  • red skin potatoes (cut into 1 inch pieces) 
  • canola oil 
  • salt and pepper 
  • optional: dried italian herbs

DO: 

  • preheat oven to 425 with the sheet pan in the oven (2 if you are using a lot of potatoes) 
  • toss red skin potatoes with salt, pepper and just enough oil to coat them (herbs as well if you are using them) 
  • put them on the preheated baking sheet(s) 
  • roast in the oven for 20-30 minutes until outsides are browned and golden, insides will be soft
